My Culinary Career
I started my career at 16 years old at a Mexican Restaurant, Ninfa's but before that I was taught by the women in my family.
I can remember as a child that I used to enjoy watching people in my family cook. I would always ask questions and get in the way. Then at the age of 16 I got a job working at a Mexican Restaurant where I learned everything about the restaurant business. I started as a waiter and was selected to become an assistant manager. I had to learn every aspect of the restaurant from bar tending, inventory, and food management. I learned cake decorating from my mother. She took classes and as soon as she got home, I would go to the kitchen with her and made her teach me everything she learned in class. Then at the age of 21 I enlisted into the Marine Corps and was a baker for two years then a cook. I went to Iraq twice once as a Marine the second time as the executive Chef of the AL Rasheed Hotel in Bagdad. While in Marine Corps cooking classes I realized that everything, I learned growing up put me ahead of everyone else which made the job very easy. Since then, I have continued to work at different restaurants to learn more. I have fed over 100,000 homeless men, women and children. Currently I am a culinary teacher and have helped a low-income schools and students win many culinary awards. The students and I were featured many times in newspapers and the local news. Culinary is fun and I would enjoy cooking for you.
